Sturmey-Archer to Derailleur Upgrade

I'm newly arrived in the tandem world having very recently been given a pretty much mint condition Rudi Altig bike.
It's equipped with a 3-speed Sturmey-Archer Hub Gear. Is it fairly straightforward to upgrade this to a 7/8 speed derailleur gearing system? - anyone got any any experience of doing this and tips they's like to pass on?.
I guess I'll need new;
26inch Wheel + Freewheel + Cassette
Mech Hanger to fit Frame Drop Out
Rear Mech + Cable + Frame Mount Lever/Rapidfire
The gap between the drop outs is c. 115mm, my other road bikes are c. 125mm. Is this 10mm critical, or is it likely I'll be able to 'squeeze' a wheel + cassette in?. I guess 9 or 10 speeds are out for this reason, as the tolerances will be just too small.
Any hints on where to source the kit - especially a (presuambly) tandem-specific wheel?.
Also, Google hasn't ben much use to me in finding out the origins of the bike. Anyone able to shed any light on the Rudi Altig tandems - period + location of manufacture etc?.
