Brakes - advice

we have a Trek Z1000 which we have had for a few years and have time trialled with it as well as toured across France. However, as a planned attempted up Mont Ventoux next July (not the Etape) we rode the Phil & Friends Challenge ride as our first tandem sportive. Whilst the 20% climbs where doable the 20% descents where very scary to the point where the stoker got off! The brakes as supplied are centre pull brakes as commonly used on cyclo-cross bikes.
So I think I have a few options which revolve around: a) fitting v-brakes with a travel agent, b) a with a drum/drag brake or c) a with a disk brake.
The v-brakes will undoubtedly give me more brakes but I do need one of the others. The drum brake acting like a drag would be great on the 13 mile descent but weighs twice as much and we have to carry up 13 miles first! Iím not sure if the bike can take a disk or if it can used as a drag.
Any assistance would be great.
