I would also recommend the Schwalbe Marathon Range. For the riding you describe I would suggest the Marathon XR, The Marathon Cross or the simple Marathon preferably in a 26x2.0 though I think the Marathon Cross is only in a 26x1.75
I used the Marathon XR folding tyre and found it excellent and very long lived. I had one on the back for over 6,000 miles; twice as far as any other tyre has survived on our tandem. It is intended for unsealed roads and tracks. However it is a bit heavy and noisy on roads. I have now changed to the Marathon Supreme as we ride 95% on tarmac. I find the Marathon Supreme excellent for roads but it probably has too little tread for the tracks you use. Run at the maximum indicated pressure or a little more unless your stoker is very light. Don't be tempted to drop it much for off road.
The main problem with tyres on tandems is that they are prone to splitting where the sidewall bends round the rim. I have never seen any sign of this with the Marathon XR. Download the full Schwalbe Catalogue from their web site http://www.schwalbe.co.uk/c-downloads-schwalbe-catalogue.html and have a good look at the options. Think of the weight on the back tyre; half your weight plus most of your stoker's weight plus any luggage if you tour and compare this with the maximum load given for that tyre. That is why we have gone for the 26x2.0 and I think it is probably why we had so many failures with 26x1.5 tyres.
